We select our artichoke among the best quality free of any filaments or insects damage. After receiving, it is cleaned from its paper and sorted according to various diameters in order to have homogeneous sizes inside each bag when processing the final product packing. The fresh artichoke of small size is submitted to various phases starting respectively by the choice selection, the decortications, the size sorting and the internal mechanic or manual cleaning.
It is also carefully cleaned without leaving any residue that might have entered during these operations.
